Soaking: Start by soaking the chickpeas in plenty of water overnight. This step is essential to soften the chickpeas and reduce cooking time.

Cooking the Chickpeas:
Changing the Water: The following morning, drain the chickpeas and change the water.
Boiling: Place the chickpeas in a pot with fresh water and add garlic, sage, rosemary, and a generous pinch of salt. Bring to a boil and let cook for about an hour, or until the chickpeas are tender.

Preparing the Garlic: Boiling the Garlic: While the chickpeas are cooking, boil the garlic (with the germ removed, as it can be indigestible) five times, changing the water each time. This process will make the garlic sweeter and less pungent, perfect for our hummus.

Blending and Seasoning: Blending: Once the chickpeas are cooked, drain them and transfer them to a blender along with the cooked garlic. Adding the Seasonings: Add lemon juice, tahini, Worcester sauce, a few drops of Tabasco, sesame oil, soy sauce, a pinch of salt, and extra virgin olive oil. Blend everything until smooth and creamy.

Chef’s Tips:
Texture: If the hummus is too thick, you can add some of the chickpea cooking water to adjust the consistency.
Flavor: Taste and adjust with salt, lemon, or spices according to your personal preference.
Presentation: Serve the hummus in a bowl, garnished with a drizzle of extra virgin olive oil, a sprinkle of paprika, and some fresh parsley leaves.
