Our Menu Follows the Seasons

A kitchen that evolves with nature

At Cactus Milano, the menu is never static. It changes with the seasons, following the natural rhythm of the earth. This allows us to work with ingredients at their peak, when they are freshest, most nutritious and full of flavor. It’s a choice that respects the environment and lets us offer dishes that are always different and always surprising.

Each season brings new protagonists

In spring, aromatic herbs, asparagus and fava beans flourish. Summer brings ripe tomatoes, melons, zucchini and peaches. Autumn celebrates pumpkins, mushrooms and radicchio, while winter offers cabbages, citrus fruits and root vegetables. Every dish is built around these ingredients, which become the true protagonists of our cuisine.

Creativity born from limitations

Changing the menu seasonally is also a creative challenge. It pushes us to experiment, invent new combinations and enhance every ingredient available. Working with what nature provides at any given moment requires intuition and flexibility, but it is precisely from these limits that our most authentic and original cuisine is born.

A menu that reflects the time we live in

Eating seasonally means being in harmony with the environment. Every dish on our menu reflects the month in which it is served, carrying with it the scents and colors of that time of year. It’s a more sustainable way of cooking, but also a more genuine one. Because following the seasons is not just a culinary choice: it is a way of seeing and living the kitchen.
