Starting with a welcome glass of Champagne and tomato soup with scallop carpaccio, moving on to elegant preparations such as amberjack tartare with marinated persimmon and almond mayonnaise. The Livorno-Caserta Cannellone blends Genovese-style seafood with Livornese cacciucco, creating a unique taste experience. The climax is reached with the stuffed squid, paired with cauliflower and black cabbage in a rich fish jus.
