We ask ourselves: what is the earth offering right now? Baby zucchini, fresh peas, edible flowers, or young carrots. From there, the creative process begins, involving our chefs, suppliers, and our vision of a more ethical cuisine.
The selection of fresh ingredients
We work only with the freshest vegetables, carefully chosen each week based on availability and quality. We collaborate with producers who share our philosophy: small gardens, sustainable farms, local growers. Every ingredient must not only taste good but also respect the soil, the people, and the natural time of maturation.
Light techniques to enhance every vegetable
Once in the kitchen, vegetables are treated with care. We prepare them in different textures: raw, steamed, grilled, fermented. We use light marinades, short cooking times, and natural seasonings. The goal is to enhance their natural flavor without covering it, keeping every dish light and digestible. One example is our “Orto di Cactus,” where fifteen different vegetables coexist in perfect harmony.
