A Kitchen That Starts
From the Earth Sustainability is not a label. It is our guiding principle. Each day, we select seasonal ingredients from suppliers who share our values: small farmers, organic producers, and responsible fishers. There is no meat on our menu. Not by extremism, but by coherence. Chef Alessio Sebastiani has chosen to exclude it in favor of a cuisine that is lighter for the body and more respectful of the planet, without ever sacrificing taste.
Plastic-Free, Full of Flavor
Even the smallest details reflect our green philosophy. We have eliminated single-use plastics, choosing compostable or reusable materials, and are committed to a real reduction in waste. In the kitchen, every part of each ingredient is put to use. Peels become chips, leaves are turned into infusions, and roots are transformed into extracts. This no-waste mindset inspires creativity and introduces unexpected flavors.
