The sea has many faces, and we have chosen to tell four of them through a simple, ancient method: the skewer. This dish was created to combine elegance with immediacy, enhancing fish and seafood with a cooking style that preserves their character while weaving them together into a single story.

Meagre, scallop, tuna, and squid

The stars of this creation are four ingredients that symbolize the sea: meagre with its delicate flesh, scallop soft and enveloping, tuna bold and flavorful, and squid tender and savory. Each brings a different nuance, yet on the skewer they find harmony, creating a tasting experience that surprises with variety and balance.

The yakitori technique

Inspired by the Japanese tradition of yakitori, we have embraced a skewered cooking method that caramelizes and lightly smokes the surface while keeping the inside juicy and delicate. The result is a play of textures and flavors that recalls the grill, yet with the lightness that defines our cuisine.

Chef Alessio Sebastiani’s signature

This dish bears the signature of Chef Alessio Sebastiani, who chose to reinterpret an Eastern technique through a Mediterranean lens. It is his way of telling the story of the sea with essentiality and character, allowing the raw ingredient to speak for itself with strength. Each skewer becomes a small journey where different cultures meet on the plate.
